Macolo was born from Monica and Gaetano's dream of restoring an old farmhouse already listed in the Leopoldine Land Registry of the 1800s.
We work to realize our dream:live by cultivating the land as our grandparents did.

The name comes from a stream on the property called "Forra di Macolo." Located in Tuscany, Italy, on the Montalbano hills in Pistoia province, we are an organic farm.
To preserve the high quality of our oil, we cultivate our olive trees using traditional methods. The olives are hand-picked, carefully selected, and stored at low temperatures in a refrigerated room before being cold-pressed within 24 hours. The oil is then decanted, filtered, and stored in an oxygen-free environment.
